Lamak Bainti Rice (Minangkabau, West Sumatra)
Ingredients :
- 200 grams ketan rice
- 100 mls of coconut milk (squeezed from ¼ of coconut endosperm)
- 4 cms turmeric, grated, added some water, squeezed, and skimmed
- ¾ teaspoon salt
- Banana leaves for covering the rice
Ingredients for Filling :
- 75 grams grated coconut
- 1 pandan leaf
- 100 grams palm sugar, cut into small pieces
- 50 mls water
Directions :
- Mix coconut milk and turmeric water and stew with salt, stir and bring to boil
- Steam the ketan rice for 10 minutes and transfer to cool pan
- Pour the mixed water (coconut milk and turmeric) to the ketan rice.
- Steam again until cooked through
- Cook the ingredients for filling, stir until produce the oil
- Take the cooked rice, spread on the banana leaf, put the content ingredients inside and roll the rice
Served for 13 portions
