Malay Literature

Nasi Lemak Pekanbaru (Riau)

Ingredients :

  • ˝ kg rice
  • ˝ liter coconut milk 

Seasonings :

  • 125 grams onion, half fried, and others grinded
  • 75 grams garlic, half fried, and others grinded
  • 5 seeds cardamom
  • 3 Lawang leaves
  • 3 pieces cloves
  • Bay leaves
  • Citronella
  • Salt
  • Oil 

Directions :

  1. Wash the rice
  2. Bring some water to boil in a pan, parboil the rice in the boiled water
  3. In a frying pan, heat the oil
  4. Mix bay leaves and citronella, saute them in the heated oil until smell aromatic.
  5. Add the cloves, grinded onion and garlic
  6. Sauté the seasonings until cooked through
  7. Add the coconut milk, stir, and if necessary add some water
  8. Put the parboiled rice in the coconut milk
  9. Add the fried onion, garlic, and salt. Mix together
  10. Put the rice combined with the cooked seasonings in the pan.
  11. Steam until cooked
  12. Serve the Nasi Lemak with other side dishes such as Ikan goeng selais bumbu lado ijo, pekedel ikan patin, ikan goreng lome, balado telur puyuh, pickles of pineapple, cucumber, and emping.
